Chef Tolga Kamiloğlu, whose career runs from Italy back to Çeşme, opened Ritüel in 2023 inside the adults-only Gaia by the Sea on the quiet Şifne shore. The cooking is a detailed, elevated take on Turkish cuisine with occasional Asian accents - charcoal-grilled baby calamari in a tomato-vinegar-mirin jus, citrus-led desserts - served on an outdoor terrace right over the water. It carries a place in the Michelin Guide and treats dinner as an unhurried sensory sequence rather than a sunset photo-op.
