Castelvetro di Modena
Hilltop acetaia dining over its own balsamico barrels
Bergonzi family culatello, aged on site since 1780
A countryside table near the Reggia di Colorno that the Bergonzi family has run since 1780, with its own cellars maturing Culatello di Zibello DOP at 16, 26 and 38 months. The seasonal kitchen runs from anolini and the rare Colorno tortel dols to Po-river fish and Apennine flavors, all in an elegant trattoria mood. The ageing rooms can be visited, making it as much producer experience as restaurant.
Book the culatello cellar visit with lunch; the long-aged DOP and the tortel dols are the reasons to make the trip.
