Bergamo-born Mario Gamba opened Acquarello in 1994 after years under Heinz Winkler at Tantris and Alain Chapel in France. The Michelin star has been continuous since 2000, a quiet, almost stubborn record in a city where Italian fine-dining tends to churn. The dining room is hushed, ivory-and-gold, the kind of place where a couple at the next table is celebrating a 40th anniversary without making it everyone's business. Pasta is the heart, handmade, restrained, the sauce always serving the noodle.
The tasting menu is the move; the à la carte holds up but you came for Gamba's hand. Wine list is one of Munich's best Italian cellars, ask the sommelier to walk you through Northern Italy. Lunch is roughly half the price of dinner, same kitchen.
