Tohru Nakamura, Munich-born, German-Japanese, runs the only three-star room in the city from inside the Schreiberei, the chancery building where the city has kept its written records since 1552. The eight- or ten-course tasting menu reads as a sustained dialogue between European technique and the kaiseki sensibility he learned in Japan: precision, seasonality, and the discipline of letting one ingredient lead. The room seats roughly twenty, lit low against stone walls; service is unhurried, formal without being stiff. Cancellation policy is 450€ per cover within 48 hours, which tells you what kind of booking this is.
Book six to eight weeks ahead. Bar Tatar in the same building is the casual sister, same address, walk-in tartare and natural wines, runs Tue–Fri from 17:00 and Sat from 13:00. If Tohru is sold out, Bar Tatar is the consolation that doesn't feel like one.
