Tohru Nakamura, Munich-born, German-Japanese, runs the only three-star room in the city from inside the Schreiberei, the chancery building where the city has kept its written records since 1552. The eight- or ten-course tasting menu reads as a sustained dialogue between European technique and the kaiseki sensibility he learned in Japan: precision, seasonality, and the discipline of letting one ingredient lead.
