Turin Michelin-starred Alfredo Russo runs the signature room at Maxx Royal Bodrum, and the menu reads like a quiet argument for technique over theatrics, handmade tortelli with seasonal fillings, a single perfect risotto, fish that arrives looking exactly like itself. The dining room is hushed, the wine list weighted toward Piedmont and the Aegean. ORO landed in both the 2025 Michelin Guide selection for Muğla and the Gault & Millau Türkiye 2025 Guide in its debut season, rare for a hotel restaurant.
The tasting menu is the move; à la carte is fine but the kitchen's argument lands cleaner across seven courses. Reserve at least a week ahead in July-August.
