Kurochan by IOKI
Türkbükü
Mandarin Oriental's Japanese-Peruvian room, sushi, robata and sake on the resort's main beach, run by the IOKI Istanbul team
Susona's Michelin Guide-listed dining room, Gürkan Tümsek's micro-local Aegean kitchen, zero-waste, vegetable-forward
Gürkan Tümsek runs Malva as a quiet thesis, most ingredients arrive from within fifty kilometres, the kitchen runs near zero-waste, and the menu shifts every few weeks with what the Aegean farmers and fishermen actually have. Local prawns become agnolotti with bisque; red mullet finds its way into a Marseille bouillabaisse; vegetables are treated with the seriousness usually reserved for the day's catch. Michelin Guide listed since 2024. The room sits above the cove at Susona, all warm timber and lantern light.
The vegetable-only tasting is not a compromise, it's the dish that explains the kitchen. Pair with the Aegean wine flight; the sommelier knows the small producers.
