On Bermondsey Street, José is José Pizarro's first London bar, opened 2011, twenty-odd seats and a standing counter, no bookings, the pintxos chalkboard changing twice a service. Sherry list is the spine, the jamón ibérico de bellota is sliced to order, the croquetas and the tortilla and the grilled prawns run on a loop. Sister room Pizarro (proper restaurant) sits forty metres up the street for the booking; the bar itself is the Tuesday-evening walk-in that the audience that has eaten at Sala de Despiece in Madrid keeps as London's nearest equivalent.
No reservations, arrive before 18:30 or after 21:00 to avoid the queue. Sister room Pizarro takes bookings for sit-down meals. Borough Market and Maltby Street walk in fifteen minutes; London Bridge tube is the closer arrival.
