Joseph Viola's Vieux-Lyon outpost sits on rue Tramassac, the quieter Saint-Jean end rather than the souvenir-shop gauntlet. It applies the same MOF kitchen, the famed pâté-croûte and proper Lyonnais classics in a vaulted old-town room. The real reason to eat a bouchon in Vieux-Lyon, where most rooms coast on foot traffic.
