Across the river in Gros, Bergara is one of the bars credited with elevating the pintxo into miniature haute cuisine. Its award cabinet is heavy with classics: the Txalupa, a hot puff-pastry boat of mushrooms, prawns and gratineed cheese, plus the Udaberri and Itxaso. A bright, buffet-style counter and a loyal local following away from the Old Town crush.
The Txalupa is the must-order; Gros is a calmer, more local alternative to the Parte Vieja scrum.
