Chef Francesco Stara cooks a near-zero-waste menu from the catch and herbs of the Nora lagoon itself, the dining room ringed by water with the Punic-Roman ruins and Aragonese tower beyond. Tasting menus follow the day's haul, using fillet, belly, bones and scales alike. The setting and the cooking are inseparable here.
