Founded in 1956 by Aldina Fava, known as Gigina, in the northern Arcoveggio district, and still rolling sfoglia and simmering ragù to genuine Bolognese tradition. The tagliatelle al ragù and tortellini in brodo are the house classics, backed by a deep regional and national wine list of over 300 labels. Elegant but informal.
Well outside the tourist centre; the mortadella is from a Slow Food presidium.
