A pocket-sized room near the Opéra where the Hugon family has cooked since 1937, in the lineage of the Lyonnais mères. Expect generous, unfussy plates: quenelle, tablier de sapeur, boeuf mode, and a daily blackboard. A dozen tables, no pretension, and the kind of home cooking that explains why the bouchon tradition survives.
