Sardinia's capital wears its layers openly — the limestone ramparts of Castello looking down over the harbour, the fishmonger shouts of the San Benedetto market, the tiled palazzi of the Marina quarter sloping toward the port. Dining here is a year-round, local affair rather than a seasonal performance: this is a working city where chefs build menus around what the morning boats and the Campidano plain actually deliver. Expect bottarga grated over fregola, sea urchin in spring, suckling pig from the interior, and a confident new guard reinterpreting all of it. The tables run from white-tablecloth fine dining to wine-bar counters and family trattorie within a few sloping streets of each other.
