Cotto Sul Mare is the fine-dining room at Casa Dell'Arte Hotel of Arts & Leisure, the long-running art-collector boutique on the Torba coast. Lunch on the jetty is the move and the burrata-with-sea-salt is the entry. For dinner ask for a deck four-top and pair the whole fish with the Aegean white flight; the wine list runs deeper than the room would suggest.
