Cédric Grolet, the Le Meurice-trained pastry chef who reframed what a fruit tart could be, opened his first London counter at The Berkeley in 2023. The hyper-realistic fruit sculptures (a hazelnut that is not a hazelnut, a lemon that is not a lemon) sit alongside hand-laminated viennoiserie at breakfast and a seated afternoon-pastry service that runs until early evening. The room is small and faces Wilton Place; bookings open thirty days ahead and the Saturday morning slot is the one to chase. The crowd that has queued at Opéra in Paris already knows the register.
