Gökhan Safkan opened Roka Bahçe in Hacımemiş's back lanes in 2010 and has held the same line ever since: every herb, every meat, every dairy out of Tire, an Aegean menu carrying gentle Balkan echoes from his own kitchen, and a stone courtyard under fig and mulberry that stays a register quieter than anywhere on Kemalpaşa. The MICHELIN Guide Türkiye listing arrived late but felt like confirmation rather than discovery.
The orange-and-onion artichoke and the day's whole sea bass are the two dishes the regulars order without looking. Book the back of the courtyard, not the front terrace.
