The fine-dining room of the St. Regis Mardavall, Es Fum has held a Michelin star since 2011 and is led by Canarian chef Miguel Navarro, schooled under Martín Berasategui. The cooking is precise and restrained across three tasting menus — Origen, Vegetal and Recorrido — in six, eight or ten courses. The sculpture-dotted terrace looks straight out to sea.
Seasonal: the resort runs roughly February to late November, so confirm dates. Dinner only; request the terrace in summer and reserve well ahead.
