A short walk from Playa de Muro, Fusión19 puts Mallorcan produce — much of it from the kitchen's own garden near Alcúdia — at the centre of two tasting menus, Plenitud and Esencia. Chefs Aleix Serra and Marc Marsol weave memory, tradition and travel into an evolving menu. A glass-fronted cellar of several hundred labels and an open kitchen frame the modern, winter-garden room.
