| Dernière vérification: May 2026 Cafe Chives opened on Caferpaşa Caddesi in Eskiçeşme as a three-partner venture, with the German baker Roger Lange, known locally as Roger the Baker, running the kitchen. The room is small and reads more Berlin Charlottenburg than central Bodrum: sourdough breads from a starter Lange brought from Hamburg, croissants laminated the morning of, a Munchbox grazing tray that the room is now known for, and proper espresso. There is a separate night-shift sister room (@chivesnightshift) for the after-dinner hour.
